in your suggestion, the fee is always active as soon as one of the booking days is on the weekend. But this is not what i want.

You have very specific conditions. The current capabilities of the theme do not allow this to be implemented.
You can use this hook (aucapina_condition_check) in the Child Theme to modify any condition:
